Five Spices Ribs

Ingredients

1kg/2 ¼ lb Spare ribs

10ml/2 tsp Chinese five-spice powder

2 Garlic cloves, crushed

15ml/1 tbsp grated fresh root ginger

2.5ml/ ½ tsp. chilli sauce

60ml/4 tbsp Dark soy sauce

45ml/3 tbsp dark muscovado sugar

15ml/1 tbsp sunflower oil

4 Spring onions

(Serves 4)

Method

  1. If the spare ribs are still attached to each other, cut between them to separate them . Place the spare ribs in a large bowl.
  2. Mix together all the remaining ingredients, except the spring onions, and pour over the ribs. Toss to coat evenly. Cover the bowl and leave to marinate in the refrigerator overnight.
  3. Cooke the ribs on a medium-hot barbecue, turning frequently. For about 30-40 minutes. Brush occasionally with the remaining marinade.
  4. While the ribs are cooking finely slice the spring onions. Sprinkle them over the ribs and serve immediately.
