Fish in coconut milk and chilli sauce
INGREDIENTS
4 white fish fillets
400ml coconut milk
1 red chilli pepper
1 tea spoon chopped garlic
1 banana shallot
1 pinch of gara masala
½ lime
1 bay leaf
1 spoon of freshly chopped coriander
1 spoon of vegetable oil
Salt, pepper
MEATHOD
Chop shallots finely and fry for a few moments, add garlic and chilli, keep on heat for 1min. Make sure onion is staying pale. Next pour in coconut milk, add lime , bay leave, garamasala and cook for 3-5 min. Gently put fish in the pot and cook for 8-12 min. Making sure fish is fully cooked and sauce quantity is reduced by half, season with salt and pepper, finish with chopped fresh coriander.
Serve with stir fry rice noodles or rice
