White Sauce
Ingredients
20g butter
20g plain flour
A pinch of ground nutmeg
290ml creamy milk
Salt and freshly ground white pepper
Method
1) Melt the butter in a heavy saucepan. Remove from the heat.
2) Add flour and the nutmeg and stir over the heat for 1 minute. Remove the pan from the heat, gradually stir in the milk and mix well.
3) Return the sauce to the heat and stir continuously until boiling
4) Simmer for 2 minutes and season with salt and pepper
