Honey and Fruits Rye Bread and Rolls Recipe
You will need:
- 300g Rye flour
- 200 g White bread flour
- 50g fresh yeast
- 2 table spoons of honey
-100 g dry fruits
- 1 tea spoon salt
- 300 ml water
- pinch of sugar
method
mix both flours togheter and salt. in cup of warm water mix yeast and sugar , pour in to the flour mix and leave for few minutes to activate yeast.
Stir togheter flour and yeast and start knead slowly adding water for approx. 10min. , leave in bowl for 90min. - mixture should double in size .
Mix honey and fruits in to the dough, flour a bread tin, transfer dough in to baking tin or form rolls and leave to proof for 2hours ,
You can brush top with water - that's make crust nice and crispy
Bake in oven on 220C for 30-35min- bread and 22-25min. - rolls
