Mascarpone vanilla cheesecake recipe

Mascarpone vanilla cheesecake

Cheesecake :
200g mascarpone cheese
100g double cream
1tsp vanilla sugar
30g caster sugar
pinch lemon zest
berries and flowers for garnish

Puff pastry ring :
puff pastry roll
vanilla sugar
cinnamon
egg to glaze

Peach coulis :
3 peaches
¼ lemon juice
15 g sugar

Whisk cream and sugar, mix cheese with vanilla, lemon zest till fluffy. Mix in to the mascarpone whipped cream, put in the fridge to set .

Blend peaches, lemon juice and sugar to make coulis.
Â
Cut puff pastry in to 7mm width strip, roll pastry on metal ring, glaze with egg coat with vanilla and cinnamon sugar, bake 180C for approx. 15min , leave to cool .

Fill ring with cheesecake mix using piping bag with flat nozzle, garnish with fresh fruits, ………
